Whipped Cauliflower
pseudo mashed potatoes

1 cauliflower
1 small onion
1/2 tsp. salt
1 Tbsp. Brommell and Brown yogurt butter
1/3 c. water
1 tsp. chicken boullion granules or 1 cube
1/2 - 3/4 tsp. ground or dried thyme (depending on the size cauliflower)
2 Tbsp. 1% milk
3 cloves of roasted garlic

  1. Wash cauliflower and cut into small pieces.
  2. Steam in water and boullion until very soft (about 20 minutes)
  3. Chop onion and sautee in butter until starting to turn brown, sprinkle with the salt as it's cooking
  4. Put all ingredients into a food processor or blender and whip until smooth
  5. Adjust seasoning to taste and serve hot
