Apple Braised Chicken
(4 servings - 2 pts per)
2 tsp. vegetable oil
1 c. apple cider
4 chicken cutlets, 4 oz. each, no skin, no bone
1 c. water
1 chicken bullion cube
2 Tbsp. flour
1 large onion sliced
1/2 tsp. ginger
2 med apples - cored and sliced
2 tsp. cornstarch
seasoning: salt, pepper, garlic powder, onion powder; optional Cayenne pepper
- Season flour with seasonings and coat chicken wth mixture. Brown in the 2 tsp. vegtable oil and remove.
- Add onion to pan and sauté till brown
- Stir in apples, cider, stock, S & P, ginger and chicken. Bring to a simmer, cover and cook for 20 minutes.
- In small bowl, take some of the pan juices and add cornstarch - wisk. Combine in pan, stirring constantly till thickened.
- Serve hot
