This is an easy to make salad that is great to mix with lots of dishes - use it with Fijitos, put on top of hummus or baba ganoush, add as a garnish to soups, or add to green salads.

2 fresh medium tomatoes
1 medium yellow onion
Bunch of fresh cilantro
chopped jalapenos
salt and pepper

  1. Wash all
  2. Dice tomatoes and onions into a bowl
  3. Chop cilantro after removing stems. Mix into the tomato mixture to taste, but I use a lot (at least 3 Tbsp)
  4. Add jalapenos, salt and pepper to taste
  5. Chill

Variation: add canned corn to add color, but this will also add points
