Pesto Sauce

This low fat version of a great Italian sauce can be used in a variety of way including over macaroni, as stuffing mixed with sun dried or as a substitute in any recipe you find.

1 c. loosely packed fresh cilantro leaves
1/2 c. loosely packed frest flat-leaf parsley leaves (can use curly variety)
1/2 c. loosely packed fresh basil leaves
1/4 c. sliced scallions
2 cloves garlic, cut into pieces
juice of 1 lime
2 tsp. oilive oil
1/4 tsp. salt
1/4 c. reduced sodium chicken broth
1 Tbsp. grated Romano or Parmesan cheese

  1. In a food processor, combine all ingredients except broth and cheese. Process for aobut 15 seconds until all are finely chopped
  2. While processing, gradually add additional broth
  3. Stir in cheese.

This dresssing will last awhile in the refrigerator. If you use 3 or more Tbsp, count it as 1 point. 4 pts for entire recipe
