Coconut Shrimp

The points and servings are hard to figure here... Add 1 pt for each shrimp you eat (that's for the batter) and 1 pt for every 2 oz. of cooked shrimp you eat. That's as close as I can go.

This is a great dish for an appetizer.

2 large egg whites
2/3 c. beer
1/4 tsp. salt
3/4 c. flour
1 1/2 tsp. baking powder
2 c. sweetened coconut
oil spray
24 shrimp

  1. preheat to 450 degrees F.
  2. Coat baking pan with oil spray.
  3. Wisk together egg whites, 1/2 c. flour, beer, baking powder, and salt. Place remaining flour in a bowl for dredging. Place Coconut on waxed paper.
  4. Clean shrimp.
  5. Holding shrimp by the tail, cover in flour, dip in egg batter then coconut.
  6. Spray shrimp with oil spray and place on baking pan. Bake 10-12 min. Serve hot.
