Cauliflower Soup

1 medium Cauliflower, cut into pieces
1 c. carrots
2 stalks celery
1 medium onion, peeled and cut into pieces
1/2 c. sliced mushrooms
3 c. water
1 Tbsp. low sodium chicken bullion (or 3 cubes)

3 cloves roasted garlic
1 tsp. ground cumin
1 Tbsp. low sodium soy sauce
1/4 tsp. combination of white and black pepper or mixed pepper
1/4 tsp. ground thyme
dash of cayenne pepper

  1. Put all ingredients, except seasoning, into a pot and steam for 15-20 minutes until vegetables are soft
  2. Puree all in a blender, adding the seasoning
  3. Serve hot

Variations:

  • When serving, add 2% cheddar or american cheese - increase points to what ever you add
  • Steam 1-2 cups of vegetables like broccoli, bok choy, snap peas or pea pods, asparagus and add to the soup - this makes a very filling meal, all for 0 points!
