Gazpacho Soup
(4 portions)

This cold soup is very refreshing and a great way to lunch or supplement a dinner.

2 c. tomato juice
1/4 c. white vinegar
1 Tbsp. olive oil
1 large cucumber peeled (I prefer the seedless)
4 ripe tomatos
1/2 medium onion
1/2 large green pepper
1-2 cloves garlic, minced
2-3 tsp. cumin
salt and pepper to taste

1. Cut up all veggies small, but not minced
2. Mix all ingredients together and chill at least 3 hours
