Lemon Crumb Chicken
(4 portions - 3 pts each)

This tasty dish is really moist.

1 cup Whole wheat bread crumbs (if using white bread crumbs, adjust to 4 pt each)
1 Tbsp grated Romano cheese
1 Tbsp minced parsley
1 Tbsp lemon zest
4 (1/4 lb.) skinless boneless chicken breasts, lightly pounded or buy thin cutlets
1/2 tsp salt
1/2 tsp pepper
2 Tbsp Greek, non-fat plain yogurt

1. Preheat oven to 425° F. Spray pan with nonstick spay. Combine the bread crumbs, cheese, parsley, and lemon zest in a med bowl; transfer to a sheet of wax paper or tin foil

2. Sprinkle chicken with S&P; spread both sides with yogurt. Coat both sides with the crumb mixture and arrange on baking pan. Spay tops lightly.

3. Bake until crust is golden and chicken is cooked through, 20-25 min.(Do not turn)
